There are so many diets out there. You name it; I’ve tried it. Something I found to cause one of the biggest shifts in my health was sticking to a clean eating diet. The biggest surprise? It wasn’t that hard to do! Below are some breakfast ideas if you’re looking to get into the clean eating lifestyle.
OATMEAL
1/2 cup steel cut oats
1/2 cup water
1/2 cup organic almond milk
Dash of cinnamon
Fruit of choice (this recipe works great with either bananas, apples or strawberries)
Stevia to sweeten if needed
In a bowl, mix all of the ingredients together. Microwave on high for one to two minutes. Now you have an easy, healthy breakfast!
EGG SCRAMBLE
Organic cooking spray or coconut oil
1 egg
1/2 cup egg whites
Chopped vegetables (I like to use tomatoes, broccoli, peppers, and onions)
Scoop of salsa on top
Salt and pepper to taste
Crushed red pepper to taste (if you like a little spice)
Heat a small pan over medium/low heat, and spray with organic cooking spray or use a little coconut oil. Add all the veggies to the pan.
In the pan, sauté the vegetables until slightly browned.
In a separate bowl combine the raw egg and egg whites. Whisk them together. Once the vegetables are cooked through, pour the egg mixture over the top.
Use a spatula to combine all the ingredients until the eggs are cooked through. Season to taste with salt and pepper.
Transfer to a bowl, top with salsa and enjoy!
AVOCADO TOAST WITH AN OVER-EASY EGG
1 slice whole grain bread
1/2 avocado
1 egg
Salt and pepper to taste
Crushed red pepper to taste
In a toaster or toaster oven, toast the bread.
Heat a small pan over medium/low heat. Crack the egg over the pan and cook until the white of the egg is no longer translucent.
In a bowl, mash half the avocado. Add salt and pepper to taste to the mashed avocado.
Once the bread is toasted, spread mashed avocado on bread.
Top with the over-easy egg and sprinkle the crushed red pepper to taste on top.
PROTEIN SHAKE
1 serving of organic plant-based vanilla protein
1/2 frozen banana
4-5 frozen strawberries
1 cup of organic almond milk
1 scoop of collagen peptides (optional)
In a blender, combine all the ingredients. Blend well and serve. If you like your shakes thicker, add an ice cube or two.
